• 1 1/2 pounds pomegranate seeds • 1/4 cup orange juice • 1 tablespoon honey • 1 tablespoon grated ginger • 1/4 teaspoon salt • 3 tablespoons olive oil • 1 large navel orange, peeled and segmented • Fresh mint leaves for garnish

  1. In a blender or food processor, combine pomegranate seeds, orange juice, honey, grated ginger, and salt. Blend until smooth.
  2. With the blender or food processor still running, slowly pour in olive oil through the top.
  3. Add peeled and segmented navel orange to the blender or food processor. Blend until well combined.
  4. Taste and adjust sweetness or spice as needed.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Just before serving, give the mixture a good stir and adjust seasoning if necessary.
  7. Spoon the pomegranate-orange mixture into individual serving cups or glasses.
  8. Garnish with fresh mint leaves and serve chilled.
