• Pomelos (2-3) • Sparkling water • Honey syrup (1:1 honey and water, dissolved) • Lime juice • Mint leaves • Ice cubes

  1. Cut the pomelos in half and juiced them.
  2. Fill a large pitcher with ice cubes.
  3. Pour the pomelo juice into the pitcher until it’s about 3/4 full.
  4. Add honey syrup to taste, stirring well to combine.
  5. Squeeze a sliver of fresh lime juice into the pitcher and stir gently.
  6. Muddle mint leaves in the pitcher to release their oils and flavor.
  7. Top the pitcher off with sparkling water and stir gently to combine.
