- Heat 2 tablespoons of olive oil in a large pan over medium-high heat.
- Add 1 onion, finely chopped, and cook until translucent, about 3-4 minutes.
- Add 2 cloves of garlic, minced, and cook for an additional minute.
- Add 1 teaspoon ground cumin, 1/2 teaspoon ground coriander, and 1/2 teaspoon turmeric. Cook for 1 minute, stirring constantly.
- Add 1-inch piece of fresh ginger, grated, and 2 tablespoons tamarind paste. Cook for an additional minute, stirring frequently.
- Add 1 cup ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Stir in 2 tablespoons tomato puree, 1 tablespoon vinegar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Reduce heat to low and simmer for at least 30 minutes, stirring occasionally, allowing flavors to meld.
- Just before serving, stir in 1/4 teaspoon red chili flakes and adjust seasoning as needed.
- Garnish with chopped fresh cilantro and serve over rice or with naan bread.
