Ingredients:
- Sous vide scallops
- Foie gras
- Pickled ramps
- Microgreens
- Truffle oil
- Sparkling water
Instructions:
- Season the scallops with salt and pepper.
- Heat the truffle oil in a pan over medium-high heat.
- Sear the scallops for 2-3 minutes on each side, until they are cooked through.
- Remove the scallops from the pan and set them aside.
- In the same pan, sauté the foie gras until it is crispy and golden brown.
- Add the microgreens to the pan and toss them with the truffle oil and foie gras.
- Place the scallops on a plate and top them with the microgreens and foie gras.
- Drizzle the sparkling water over the dish and serve immediately.
