Ingredients:

  • Sous vide scallops
  • Foie gras
  • Pickled ramps
  • Microgreens
  • Truffle oil
  • Sparkling water

Instructions:

  1. Season the scallops with salt and pepper.
  2. Heat the truffle oil in a pan over medium-high heat.
  3. Sear the scallops for 2-3 minutes on each side, until they are cooked through.
  4. Remove the scallops from the pan and set them aside.
  5. In the same pan, sauté the foie gras until it is crispy and golden brown.
  6. Add the microgreens to the pan and toss them with the truffle oil and foie gras.
  7. Place the scallops on a plate and top them with the microgreens and foie gras.
  8. Drizzle the sparkling water over the dish and serve immediately.
