Ingredients:

  • 1 cup fresh raspberries
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup heavy cream
  • 1 tablespoon vanilla extract

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a medium-sized bowl, whisk together flour and salt.
  3. In a separate bowl, mix together sugar, melted butter, egg, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the raspberries.
  6. Pour the mixture into a greased 8-inch square baking dish.
  7. Bake for 25-30 minutes or until the edges are lightly golden brown and the center is set.
  8. Allow to cool completely before serving.
