Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 cup pineapple juice
  • 1/2 cup coconut milk
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tsp grated ginger
  • Salt and pepper to taste

Instructions:

Step 1: Rinse the shrimp under cold running water and pat them dry with paper towels.

Step 2: In a large bowl, mix together the pineapple juice, coconut milk, cilantro, lime juice, ginger, salt, and pepper.

Step 3: Add the shrimp to the marinade and toss them to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Step 4: Preheat a grill or grill pan over medium-high heat.

Step 5: Remove the shrimp from the marinade and place them on the grill. Cook for 2-3 minutes per side, or until they are pink and cooked through.

Step 6: Serve the shrimp immediately, garnished with additional cilantro if desired. Enjoy!
