Ingredients:
- Light rum
- Freshly squeezed lime juice
- Simple syrup
- Mint leaves
- Pineapple juice
- Passionfruit juice
- Club soda
- Ice
Instructions:
- In a cocktail shaker, combine light rum, freshly squeezed lime juice, and simple syrup.
- Add mint leaves to the shaker and muddle (smash) them with a muddler or the back of a spoon to release their oils and flavor.
- Add pineapple juice and passionfruit juice to the shaker.
- Fill the shaker with ice and shake well for about 15-20 seconds.
- Strain the cocktail into a chilled glass filled with ice.
- Top the cocktail with club soda and garnish with a sprig of mint.
