Ingredients:
- 1 1/2 oz ginger beer
- 1 oz fresh lime juice
- 1/2 oz simple syrup
- 1 cup crushed ice
- 1/4 cup pineapple juice
- 1/4 cup mint leaves
Instructions:
- Fill a cocktail shaker with crushed ice.
- Add 1 1/2 oz ginger beer, 1 oz fresh lime juice, and 1/2 oz simple syrup to the shaker.
- Muddle the mint leaves in the shaker using a muddler or the back of a spoon.
- Strain the mixture into a highball glass filled with ice.
- Top with 1/4 cup pineapple juice and stir gently.
- Garnish with additional mint leaves and serve immediately.
