Ingredients:

  • 2 cups peach puree
  • 1 cup sparkling water
  • 1/4 cup fresh mint leaves
  • 1/4 cup simple syrup (equal parts sugar and water, dissolved)

Instructions:

  1. In a cocktail shaker, combine peach puree and sparkling water.
  2. Add the fresh mint leaves to the shaker and muddle them gently with a muddler or back of a spoon.
  3. Add the simple syrup to the shaker and stir to dissolve.
  4. Fill the shaker with ice and shake vigorously for about 15-20 seconds.
  5. Strain the cocktail into a chilled glass filled with ice.
  6. Garnish with additional fresh mint leaves or a sprig of rosemary, if desired.
