Ingredients:
- 2 cups peach puree
- 1 cup sparkling water
- 1/4 cup fresh mint leaves
- 1/4 cup simple syrup (equal parts sugar and water, dissolved)
Instructions:
- In a cocktail shaker, combine peach puree and sparkling water.
- Add the fresh mint leaves to the shaker and muddle them gently with a muddler or back of a spoon.
- Add the simple syrup to the shaker and stir to dissolve.
- Fill the shaker with ice and shake vigorously for about 15-20 seconds.
- Strain the cocktail into a chilled glass filled with ice.
- Garnish with additional fresh mint leaves or a sprig of rosemary, if desired.
