Ingredients:

  • 1 1/2 oz ginger beer
  • 1 oz fresh lime juice
  • 1/2 oz simple syrup
  • 1 cup crushed ice
  • 1/4 cup pineapple juice
  • 1/4 cup mint leaves

Instructions:

  1. Fill a cocktail shaker with crushed ice.
  2. Add 1 1/2 oz ginger beer, 1 oz fresh lime juice, and 1/2 oz simple syrup to the shaker.
  3. Muddle the mint leaves in the shaker using a muddler or the back of a spoon.
  4. Strain the mixture into a highball glass filled with ice.
  5. Top with 1/4 cup pineapple juice and stir gently.
  6. Garnish with additional mint leaves and serve immediately.
