Ingredients:
- 1 lb salmon fillet
- 1 cup mixed berries (such as blueberries, raspberries, blackberries)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1/4 cup breadcrumbs
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Place the salmon fillet on the prepared baking sheet.
- In a small bowl, mix together the olive oil, lemon juice, and honey. Pour the mixture over the salmon fillet.
- Sprinkle the breadcrumbs evenly over the top of the salmon fillet.
- Season the salmon with salt and pepper to taste.
- Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through.
- Serve the salmon hot, garnished with the mixed berries.
