Ingredients:
- Pineapple
- Chicken breast
- Bell peppers
- Onions
- Garlic
- Ginger
- Soy sauce
- Brown sugar
- Lime juice
Instructions:
Step 1: Preheat the oven to 400°F (200°C).
Step 2: Cut the chicken breast into small cubes and season with salt, pepper, and a pinch of cayenne pepper.
Step 3: Heat a large skillet over medium-high heat. Add 1 tablespoon of oil and sauté the chicken until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
Step 4: In the same skillet, add another tablespoon of oil and sauté the bell peppers, onions, and garlic until they are softened and fragrant, about 3 minutes.
Step 5: Add the ginger to the skillet and cook for an additional minute, stirring constantly.
Step 6: In a separate bowl, mix together the soy sauce, brown sugar, and lime juice. Pour the marinade over the chicken cubes and toss to coat evenly.
Step 7: Place the chicken in a large baking dish and spoon some of the marinade over the top. Bake for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
Step 8: Serve hot and enjoy!
