Ingredients:
- 2 cups blue lagoon (a blend of blueberries, raspberries, and blackberries)
- 1 cup granulated sugar
- 1/2 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- 1/4 cup chopped fresh mint leaves (optional)
Instructions:
- In a large bowl, combine the blue lagoon mixture and sugar. Stir until the sugar is fully dissolved.
- Add the water, salt, baking powder, and vanilla extract to the bowl. Mix well.
- If using mint leaves, stir them in at this point.
- Pour the mixture into a greased 8x8-inch baking dish.
- Bake at 350°F (175°C) for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool completely before cutting into squares and serving.
