  1. In a medium saucepan, combine durian flesh and palm sugar.
  2. Add 100ml of water to the saucepan and cook over low heat, stirring occasionally, until the mixture is smooth and the sugar has dissolved.
  3. Remove the saucepan from the heat and let it cool slightly.
  4. Soak the gelatin sheets in cold water for at least 5 minutes.
  5. Strain the durian mixture through a fine-mesh sieve into a clean bowl to remove any fibers or pulp.
  6. In a separate bowl, whip the coconut cream until it forms stiff peaks.
  7. Fold the whipped coconut cream into the cooled durian mixture until well combined.
  8. Squeeze out excess water from the gelatin sheets and add them to the mixture, stirring until fully dissolved.
  9. Add lime juice and salt to taste, adjusting as needed.
  10. Pour the mixture into a shallow dish or mold, and refrigerate for at least 4 hours or overnight to set.
  11. When ready to serve, drizzle with vegetable oil if desired.
