- Soak the gelatin sheets in cold water for at least 5 minutes.
- Strain the durian mixture through a fine-mesh sieve into a clean bowl to remove any fibers or pulp.
- In a separate bowl, whip the coconut cream until it forms stiff peaks.
- Fold the whipped coconut cream into the cooled durian mixture until well combined.
- Squeeze out excess water from the gelatin sheets and add them to the mixture, stirring until fully dissolved.
- Add lime juice and salt to taste, adjusting as needed.
- Pour the mixture into a shallow dish or mold, and refrigerate for at least 4 hours or overnight to set.
- When ready to serve, drizzle with vegetable oil if desired.
