- Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer for 10-15 minutes, or until the cranberries have popped and the mixture has thickened slightly.
- Strain the mixture through a fine-mesh sieve into a clean bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.
- Whisk in the heavy cream and vanilla extract until well combined.
- Stir in the salt until dissolved.
- Pour the cranberry sauce into an airtight container and refrigerate for at least 2 hours or overnight before serving.
- Just before serving, give the mixture a good stir to redistribute the flavors.
- Serve chilled, garnished with orange zest if desired.
