- Grill squash for 3-4 minutes per side, until tender and slightly charred.

- Add garlic to the skillet and cook for an additional minute, stirring constantly.
- Combine grilled squash, sautéed onion mixture, mixed greens, and queso fresco in a bowl.
- Squeeze lime juice over the top and season with salt and pepper to taste.
- Serve warm or at room temperature.
