1 pound chayote squash, peeled and sliced into 1/2-inch thick rounds 2 tablespoons olive oil 1 small onion, thinly sliced 3 cloves garlic, minced 1 cup mixed greens 1/4 cup crumbled queso fresco Salt and pepper to taste Juice of 1 lime

  1. Preheat grill or grill pan to medium-high heat.
  2. Brush chayote squash slices with olive oil, season with salt and pepper.
  3. Grill squash for 3-4 minutes per side, until tender and slightly charred.
  4. In a large skillet, sauté onion over medium heat until translucent, about 5 minutes.
  5. Add garlic to the skillet and cook for an additional minute, stirring constantly.
  6. Combine grilled squash, sautéed onion mixture, mixed greens, and queso fresco in a bowl.
  7. Squeeze lime juice over the top and season with salt and pepper to taste.
  8. Serve warm or at room temperature.
