- In a large pot, combine fresh boysenberries and 1 cup of sugar. Let it sit for 15 minutes, until the berries start to release their juice.
- Add lemon juice and water to the pot. Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer for 10 minutes.
- Strain the berry mixture through a fine-mesh sieve into a clean bowl, pressing on the solids to extract as much juice as possible. Discard the solids.
- In a small bowl, whisk together pectin and 1 cup of sugar until well combined. Add this mixture to the berry juice and stir until dissolved.
- Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer for 10 minutes.
- Remove the pot from the heat and let it cool slightly. Stir in corn syrup, light corn syrup, and unsalted butter until melted.
- Whisk in heavy cream and vanilla extract until well combined.
- Pour the jam mixture into a clean glass jar or container. Let it cool to room temperature, then refrigerate until chilled.
- Just before serving, sprinkle confectioners’ sugar over the top of the jam and add a few drops of red food coloring to tint it pink, if desired.
