Ingredients:

Fresh boysenberries, sugar, lemon juice, water, pectin, granulated sugar, corn syrup, light corn syrup, unsalted butter, heavy cream, vanilla extract, confectioners’ sugar, red food coloring.

  1. In a large pot, combine fresh boysenberries and 1 cup of sugar. Let it sit for 15 minutes, until the berries start to release their juice.
  2. Add lemon juice and water to the pot. Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer for 10 minutes.
  3. Strain the berry mixture through a fine-mesh sieve into a clean bowl, pressing on the solids to extract as much juice as possible. Discard the solids.
  4. In a small bowl, whisk together pectin and 1 cup of sugar until well combined. Add this mixture to the berry juice and stir until dissolved.
  5. Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer for 10 minutes.
  6. Remove the pot from the heat and let it cool slightly. Stir in corn syrup, light corn syrup, and unsalted butter until melted.
  7. Whisk in heavy cream and vanilla extract until well combined.
  8. Pour the jam mixture into a clean glass jar or container. Let it cool to room temperature, then refrigerate until chilled.
  9. Just before serving, sprinkle confectioners’ sugar over the top of the jam and add a few drops of red food coloring to tint it pink, if desired.
