Ingredients:
- Pineapple juice
- Coconut rum
- Lime juice
- Simple syrup
- Club soda
Instructions:
- Cut the pineapple into wedges and place them in a large bowl.
- In a small bowl, mix together the coconut rum, lime juice, and simple syrup until well combined.
- Pour the mixture over the pineapple wedges and toss to coat.
- Place the coated pineapple on a plate or tray and refrigerate for at least 30 minutes to allow the flavors to meld.
- Top each pineapple wedge with a dollop of whipped cream and garnish with a sprig of mint.
- Serve immediately, or chill in the refrigerator until ready to serve.
