Ingredients:

  • Pineapple juice
  • Coconut rum
  • Lime juice
  • Simple syrup
  • Club soda

Instructions:

  1. Cut the pineapple into wedges and place them in a large bowl.
  2. In a small bowl, mix together the coconut rum, lime juice, and simple syrup until well combined.
  3. Pour the mixture over the pineapple wedges and toss to coat.
  4. Place the coated pineapple on a plate or tray and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Top each pineapple wedge with a dollop of whipped cream and garnish with a sprig of mint.
  6. Serve immediately, or chill in the refrigerator until ready to serve.
