Ingredients:

  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. In a medium-sized bowl, mix together the blueberries and granulated sugar.
  2. Add the cornstarch to the mixture and stir until well combined.
  3. Gradually add the water to the mixture and stir until smooth.
  4. Stir in the vanilla extract and salt.
  5. Pour the mixture into a saucepan and place over medium heat, stirring constantly.
  6. Bring the mixture to a boil, then reduce heat to low and simmer for 5-7 minutes or until the mixture thickens.
  7. Remove the saucepan from the heat and let it cool slightly.
  8. Pour the blueberry mixture into individual serving cups or a large baking dish.
  9. Serve warm or at room temperature. Enjoy!
