Ingredients:
- Sweet potatoes
- Red bell peppers
- Jalapeno peppers
- Cream cheese
- Honey
- Lime juice
Instructions:
- Preheat oven to 400°F (200°C).
- Wash the sweet potatoes and cut them into bite-sized pieces.
- Place the sweet potato pieces on a baking sheet lined with parchment paper.
- Drizzle the honey over the sweet potatoes and toss to coat evenly.
- Sprinkle the red bell peppers and jalapeno peppers over the sweet potatoes and toss again.
- Bake for 20-25 minutes or until the sweet potatoes are tender and lightly browned.
- In a small bowl, mix together the cream cheese and lime juice until well combined.
- Remove the baked sweet potatoes from the oven and top each one with the cream cheese mixture.
- Return to the oven for an additional 5-7 minutes or until the cheese is melted and slightly browned.
- Serve hot and enjoy!
