Ingredients:

  • Sweet potatoes
  • Red bell peppers
  • Jalapeno peppers
  • Cream cheese
  • Honey
  • Lime juice

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash the sweet potatoes and cut them into bite-sized pieces.
  3. Place the sweet potato pieces on a baking sheet lined with parchment paper.
  4. Drizzle the honey over the sweet potatoes and toss to coat evenly.
  5. Sprinkle the red bell peppers and jalapeno peppers over the sweet potatoes and toss again.
  6. Bake for 20-25 minutes or until the sweet potatoes are tender and lightly browned.
  7. In a small bowl, mix together the cream cheese and lime juice until well combined.
  8. Remove the baked sweet potatoes from the oven and top each one with the cream cheese mixture.
  9. Return to the oven for an additional 5-7 minutes or until the cheese is melted and slightly browned.
  10. Serve hot and enjoy!
