Ingredients:

  • Pineapple chunks
  • Coconut milk
  • Brown sugar
  • Lemon juice
  • Salt
  • Ginger, grated
  • Cinnamon, ground
  • Vanilla extract

Instructions:

  1. In a blender or food processor, combine pineapple chunks, coconut milk, brown sugar, lemon juice, salt, ginger, and cinnamon. Blend until smooth.
  2. Pour mixture into a bowl and stir in vanilla extract.
  3. Taste and adjust seasoning as needed.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Serve chilled or frozen, garnished with additional ginger and cinnamon if desired.
