Ingredients:

  • Watermelon, diced
  • Coconut milk
  • Lime juice
  • Simple syrup
  • Mint leaves

Instructions:

  1. In a blender or food processor, combine diced watermelon, coconut milk, lime juice, and simple syrup. Blend until smooth.
  2. Strain the mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.
  3. Add mint leaves to the bowl and stir to combine.
  4. Pour the mixture into glasses or cups and serve immediately.
  5. Garnish with additional mint leaves or a sprig of fresh mint, if desired.
