Ingredients:
- Watermelon, diced
- Coconut milk

- Mint leaves
Instructions:
- In a blender or food processor, combine diced watermelon, coconut milk, lime juice, and simple syrup. Blend until smooth.
- Strain the mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.
- Add mint leaves to the bowl and stir to combine.

- Garnish with additional mint leaves or a sprig of fresh mint, if desired.
