Ingredients:

  • 1 ripe mango, diced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons olive oil

  1. In a small saucepan, combine honey, soy sauce, rice vinegar, grated ginger, and red pepper flakes.
  2. Bring the mixture to a simmer over medium heat, whisking constantly.
  3. Reduce the heat to low and let it cook for 5-7 minutes or until the glaze has thickened slightly.
  4. In a large bowl, combine diced mango, salt, and pepper. Toss gently to coat.
  5. Pour the warm glaze over the mango mixture and toss to combine.
  6. Taste and adjust seasoning as needed.
  7. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Just before serving, drizzle with olive oil and garnish with fresh cilantro leaves.
  9. If using nuts, sprinkle them over the top of the mango mixture just before serving.
