Ingredients:

  • Shrimp
  • Vegetables (bell peppers, onions, mushrooms)
  • Feta cheese
  • Pesto sauce
  • Balsamic glaze
  • Basil
  • Avocado

Instructions:

  1. Heat oil in a pan over medium heat.
  2. Add shrimp and cook until pink and cooked through.
  3. Add vegetables and cook until tender.
  4. Add feta cheese and cook until melted.
  5. Stir in pesto sauce and cook for 1-2 minutes.
  6. Transfer mixture to a baking dish.
  7. Drizzle with balsamic glaze and sprinkle with basil.
  8. Top with sliced avocado.
  9. Bake in preheated oven at 375°F for 10-15 minutes or until the avocado is golden brown and crispy.
