Ingredients:

  • Shrimp
  • Chicken breast
  • Pineapple
  • Mango
  • Jalapeno peppers

  • Lime juice
  • Coconut milk
  • Brown sugar

Instructions:

  1. Shrimp: Marinate in a mixture of lime juice, brown sugar, garlic, and ginger for 30 minutes.
  2. Chicken breast: Season with salt, pepper, and cilantro. Grill or pan-fry until cooked through.
  3. Pineapple: Grill or roast in the oven until caramelized and tender.
  4. Mango: Peel and chop into small pieces. Add to a mixture of coconut milk, lime juice, brown sugar, and jalapeno peppers for a salsa-like sauce.
  5. Jalapeno peppers: Roast in the oven until softened and slightly charred. Remove seeds and chop finely for use in the salsa mixture.
  6. Cilantro: Chop finely and add to the salsa mixture.
  7. Lime juice: Squeeze fresh lime juice over the dish just before serving.
  8. Coconut milk: Whisk into a smooth consistency and add to the salsa mixture.
