Ingredients:

  • Pineapple, fresh
  • Jalapeno pepper, diced
  • Red bell pepper, diced
  • Cilantro, chopped
  • Lime juice
  • Garlic, minced
  • Olive oil

Instructions:

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and sauté for 1-2 minutes until fragrant.
  3. Add diced jalapeno pepper and red bell pepper, and sauté for an additional 2-3 minutes until they start to soften.
  4. Add chopped cilantro and stir to combine with the vegetables.
  5. Squeeze lime juice over the mixture and stir to combine.
  6. Add fresh pineapple chunks to the pan and sauté for an additional 2-3 minutes until they start to soften.
  7. Season with salt and pepper to taste.
