Ingredients:

  • 1 can pineapple juice
  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup chopped pecans (optional)

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. In a large mixing bowl, whisk together pineapple juice and brown sugar until well combined.
  3. Add melted butter, eggs, and vanilla extract to the mixture and whisk until smooth.
  4. Gradually add flour to the mixture, stirring until just combined.
  5. Fold in chopped pecans (if using).
  6. Pour the batter into a greased 9x13-inch baking dish.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
