Ingredients:

  • Coconut milk
  • Pineapple juice
  • Mango puree
  • Lime juice
  • Simple syrup
  • Grenadine
  • Blue curaçao
  • Club soda

Instructions:

  1. Combine coconut milk, pineapple juice, mango puree, and lime juice in a blender. Blend until smooth.
  2. Strain the mixture through a fine-mesh sieve into a large pitcher or punch bowl. Discard any solids.
  3. Add simple syrup and grenadine to the pitcher and stir until combined.
  4. Add blue curaçao and club soda to the pitcher and stir gently.
  5. Chill the punch in the refrigerator for at least 2 hours before serving.
  6. Serve in glasses over ice, garnished with fresh fruit and a sprig of mint if desired.
