Instructions:
- Rinse the raspberries and mint leaves in cold water to remove any dirt or debris.
- In a blender or food processor, puree the raspberries until smooth.
- Strain the raspberry puree through a fine-mesh sieve into a large mixing bowl, discarding any seeds or pulp.
- Add the Prosecco or sparkling wine to the raspberry puree and stir gently to combine.
- Add the simple syrup and lime juice to the mixture and stir again until well combined.
- Fill glasses with ice and pour the raspberry cocktail over the ice, stirring gently.
- Garnish each glass with a sprig of fresh mint and serve immediately.
