Ingredients:

  • Raspberries
  • Mint leaves
  • Prosecco or sparkling wine
  • Simple syrup
  • Lime juice
  • Ice

Instructions:

  1. Rinse the raspberries and mint leaves in cold water to remove any dirt or debris.
  2. In a blender or food processor, puree the raspberries until smooth.
  3. Strain the raspberry puree through a fine-mesh sieve into a large mixing bowl, discarding any seeds or pulp.
  4. Add the Prosecco or sparkling wine to the raspberry puree and stir gently to combine.
  5. Add the simple syrup and lime juice to the mixture and stir again until well combined.
  6. Fill glasses with ice and pour the raspberry cocktail over the ice, stirring gently.
  7. Garnish each glass with a sprig of fresh mint and serve immediately.
