Ingredients:
- Fresh pineapple chunks
- Fresh ginger, peeled and grated
- Light rum
- Simple syrup
- Lime juice
Instructions:
- In a shaker filled with ice, combine 1 oz light rum, 1 oz freshly grated ginger, and 1 oz simple syrup. Shake vigorously for approximately 15-20 seconds to combine and chill the ingredients.
- Strain the mixture into a rocks glass filled with ice.
- Top the cocktail with 1 oz fresh pineapple chunks, gently press down on the pineapple to release some of the juice.
- Squeeze the lime juice over the cocktail and drop it in.
- Garnish with a pineapple wheel or wedge, if desired.
