Ingredients:
- Raspberries
- Lime juice
- White rum
- Simple syrup
- Club soda
- Ice
Instructions:
- Rinse the raspberries and remove any stems or debris.
- In a blender or food processor, puree the raspberries until smooth.
- Strain the pureed raspberries through a fine-mesh sieve into a large bowl, discarding any seeds or pulp.
- Add the lime juice and white rum to the strained raspberries and stir to combine.
- In a small saucepan, combine the simple syrup and club soda. Heat over medium heat, stirring until the simple syrup is dissolved.
- Pour the hot simple syrup mixture into the bowl with the raspberry mixture and stir until well combined.
- Chill the mixture in the refrigerator for at least 2 hours or until serving.
- Serve the mixture over ice in glasses and garnish with additional raspberries, if desired.
