Ingredients:

  • Raspberries
  • Lime juice
  • White rum
  • Simple syrup
  • Club soda
  • Ice

Instructions:

  1. Rinse the raspberries and remove any stems or debris.
  2. In a blender or food processor, puree the raspberries until smooth.
  3. Strain the pureed raspberries through a fine-mesh sieve into a large bowl, discarding any seeds or pulp.
  4. Add the lime juice and white rum to the strained raspberries and stir to combine.
  5. In a small saucepan, combine the simple syrup and club soda. Heat over medium heat, stirring until the simple syrup is dissolved.
  6. Pour the hot simple syrup mixture into the bowl with the raspberry mixture and stir until well combined.
  7. Chill the mixture in the refrigerator for at least 2 hours or until serving.
  8. Serve the mixture over ice in glasses and garnish with additional raspberries, if desired.
