Ingredients:

  • 2 cups frozen pineapple chunks
  • 1 cup coconut milk
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup simple syrup (equal parts water and granulated sugar, dissolved)
  • 2 oz light rum or other clear spirit
  • Splash of club soda
  • Ice cubes
  • Fresh mint leaves for garnish

Instructions:

  1. In a blender, combine frozen pineapple chunks, coconut milk, lime juice, simple syrup, and rum or other clear spirit. Blend until smooth.
  2. Pour mixture into glasses filled with ice cubes.
  3. Top each glass off with a splash of club soda.
  4. Stir gently to combine.
  5. Garnish with fresh mint leaves.
