Ingredients:
- 2 cups frozen pineapple chunks
- 1 cup coconut milk
- 1/4 cup freshly squeezed lime juice
- 1/4 cup simple syrup (equal parts water and granulated sugar, dissolved)
- 2 oz light rum or other clear spirit
- Splash of club soda
- Ice cubes
- Fresh mint leaves for garnish
Instructions:
- In a blender, combine frozen pineapple chunks, coconut milk, lime juice, simple syrup, and rum or other clear spirit. Blend until smooth.
- Pour mixture into glasses filled with ice cubes.
- Top each glass off with a splash of club soda.
- Stir gently to combine.
- Garnish with fresh mint leaves.
