Ingredients:
- Raspberries
- Fresh ginger
- Lime juice
- Agave syrup
- Tequila
Instructions:
- Puree raspberries in a blender until smooth.
- Peel and grate fresh ginger, then squeeze out excess liquid through cheesecloth or a fine-mesh sieve.
- Juice lime directly into a large bowl, reserve 1/4 cup of the juice for later use.
- In a small saucepan, combine agave syrup and tequila. Heat over medium heat, stirring occasionally, until syrup is smooth and slightly thickened, about 5-7 minutes.
- Strain reserved lime juice through a fine-mesh sieve into the saucepan with the syrup and tequila mixture.
- Whisk agave syrup and tequila mixture until well combined.
- Remove from heat and let cool to room temperature.
- Store in an airtight container in the refrigerator for up to 1 week.
