Ingredients:

  • Tomatoes
  • Eggs
  • Bacon or Canadian bacon
  • Cheddar cheese
  • Breadcrumbs
  • Flour
  • Salt and pepper

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together eggs, salt, and pepper.
  3. Cut bacon or Canadian bacon into small pieces and fry in a pan until crispy. Remove from heat and set aside.
  4. In the same pan, sauté the chopped onion until softened. Add the cheddar cheese and stir until melted.
  5. In a separate bowl, mix together breadcrumbs and flour.
  6. Dip each tomato slice in the egg mixture, then coat in the breadcrumb mixture, pressing the crumbs onto the tomato to help them stick.
  7. Place the coated tomatoes on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  8. Serve the baked tomatoes topped with the fried bacon and cheese mixture. Enjoy!
