Ingredients:
- Tomatoes
- Eggs
- Bacon or Canadian bacon
- Cheddar cheese
- Breadcrumbs
- Flour
- Salt and pepper
Instructions:
- Preheat oven to 375°F (190°C).
- In a bowl, whisk together eggs, salt, and pepper.
- Cut bacon or Canadian bacon into small pieces and fry in a pan until crispy. Remove from heat and set aside.
- In the same pan, sauté the chopped onion until softened. Add the cheddar cheese and stir until melted.
- In a separate bowl, mix together breadcrumbs and flour.
- Dip each tomato slice in the egg mixture, then coat in the breadcrumb mixture, pressing the crumbs onto the tomato to help them stick.
- Place the coated tomatoes on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
- Serve the baked tomatoes topped with the fried bacon and cheese mixture. Enjoy!
