- In a large pitcher, combine 2 cups of Prosecco and 1 cup of sugar. Stir until the sugar is completely dissolved.
- Add the juice of 2 lemons to the pitcher and stir well.
- Peel and pit 4-5 ripe peaches and add them to the pitcher.
- Muddle 1/4 cup of fresh mint leaves into the pitcher with a spoon or muddler to release their oils and flavor.
- Stir the mixture well to combine.
- Chill the mixture in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve the Prosecco Peach Mint Spritzer over ice in glasses and garnish each glass with additional mint leaves, if desired.
