Ingredients:

  • Sweet potato
  • Cinnamon
  • Vanilla extract
  • Coconut oil

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into bite-sized pieces.
  3. Place the sweet potato pieces on a baking sheet lined with parchment paper.
  4. Drizzle the coconut oil over the sweet potatoes and sprinkle with cinnamon.
  5. Bake for 20-25 minutes or until the sweet potatoes are tender.
  6. Remove from the oven and let cool for a few minutes.
  7. In a small bowl, mix together the vanilla extract and coconut oil to make a glaze.
  8. Brush the glaze over the sweet potatoes and serve warm.
