Ingredients:
- Sweet potato
- Cinnamon
- Vanilla extract
- Coconut oil
Instructions:
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into bite-sized pieces.
- Place the sweet potato pieces on a baking sheet lined with parchment paper.
- Drizzle the coconut oil over the sweet potatoes and sprinkle with cinnamon.
- Bake for 20-25 minutes or until the sweet potatoes are tender.
- Remove from the oven and let cool for a few minutes.
- In a small bowl, mix together the vanilla extract and coconut oil to make a glaze.
- Brush the glaze over the sweet potatoes and serve warm.
