Ingredients:

  • Mango puree
  • Peppermint extract
  • Lime juice
  • Simple syrup

Instructions:

  1. In a small saucepan, combine mango puree and peppermint extract. Heat over medium heat, stirring constantly, until the mixture is well combined and warmed through.
  2. Remove the saucepan from the heat and stir in lime juice and simple syrup.
  3. Return the saucepan to the heat and bring the mixture to a simmer, stirring occasionally.
  4. Reduce the heat to low and let the mixture cook for 5-7 minutes, or until it has thickened slightly.
  5. Remove the saucepan from the heat and let it cool to room temperature.
  6. Strain the mixture through a fine-mesh sieve into a clean container. Discard any solids.
  7. Store the mixture in an airtight container in the refrigerator for up to 3 days.
