  2. In a large bowl, toss together cauliflower florets, minced garlic, salt, and black pepper until well combined.
  3. Drizzle olive oil over the cauliflower mixture and toss to coat.
  4. Sprinkle thyme and chopped parsley over the cauliflower mixture and toss again to combine.
  5. Line a baking sheet with parchment paper and spread out the cauliflower mixture in an even layer.
  6. Roast in the preheated oven for 20-25 minutes, or until tender and caramelized.
  7. While the cauliflower is roasting, whisk together lemon juice and honey in a small bowl until well combined.
  8. Remove the cauliflower from the oven and drizzle with the lemon-honey glaze.
  9. Sprinkle crumbled feta cheese over the top of the cauliflower and serve hot.
