Ingredients:

  • Lychees
  • Heavy cream
  • Castor sugar
  • Vanilla extract

Instructions:

  1. Peel and pit the lychees.
  2. In a medium saucepan, combine the heavy cream, castor sugar, vanilla extract, and lemon juice. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is warm.
  3. Add the simple syrup to the saucepan and stir to combine.
  4. Remove the mixture from the heat and let it cool slightly.
  5. Stir in the peeled and pitted lychees.
  6. Cover the saucepan and refrigerate for at least 2 hours or overnight to allow the flavors to meld.
  7. Before serving, give the mixture a good stir and taste to adjust the sweetness level to your liking.
