  2. Add loquats to the pitcher and gently press them with the muddler or spoon to release their juice and pulp.
  3. Squeeze in lemon juice to taste.
  4. Add simple syrup to balance the flavors, stirring until dissolved.
  5. Chill the mixture in the refrigerator for at least 30 minutes to allow flavors to meld.
  6. Just before serving, stir in sparkling water to desired fizziness.
  7. Serve immediately, garnishing each glass with a sprig of mint and a lime wedge.
