- Preheat oven to 400°F (200°C).
- In a small bowl, mix together brown sugar, soy sauce, sake, mirin, rice vinegar, and sesame oil.
- Score the pork belly in a diamond pattern, cutting about 1/4 inch deep.
- Rub the mixture from step 2 all over the pork belly, making sure to get it into the scored lines.
- Place the pork belly on a wire rack set over a rimmed baking sheet or a roasting pan, fat side up.
- Roast the pork belly in the preheated oven for about 30 minutes per pound, or until tender and caramelized.
- In a small skillet, heat honey over medium heat until bubbly.
- Add minced garlic and grated ginger to the honey and stir to combine.
- Remove the pork belly from the oven and brush with the honey-garlic mixture.
- Sprinkle five-spice powder and black pepper evenly over the top of the pork belly.
- Return the pork belly to the oven for an additional 5-7 minutes, or until the glaze is caramelized.
- Remove the pork belly from the oven and let rest for 10-15 minutes before slicing.
- Garnish with chopped green onions, cilantro, and crispy shallots before serving.
