  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, soy sauce, sake, mirin, rice vinegar, and sesame oil.
  3. Score the pork belly in a diamond pattern, cutting about 1/4 inch deep.
  4. Rub the mixture from step 2 all over the pork belly, making sure to get it into the scored lines.
  5. Place the pork belly on a wire rack set over a rimmed baking sheet or a roasting pan, fat side up.
  6. Roast the pork belly in the preheated oven for about 30 minutes per pound, or until tender and caramelized.
  7. In a small skillet, heat honey over medium heat until bubbly.
  8. Add minced garlic and grated ginger to the honey and stir to combine.
  9. Remove the pork belly from the oven and brush with the honey-garlic mixture.
  10. Sprinkle five-spice powder and black pepper evenly over the top of the pork belly.
  11. Return the pork belly to the oven for an additional 5-7 minutes, or until the glaze is caramelized.
  12. Remove the pork belly from the oven and let rest for 10-15 minutes before slicing.
  13. Garnish with chopped green onions, cilantro, and crispy shallots before serving.
